Cacao Beans
It starts here with cacao beans. Harvested cacao beans are dried, fermented and cracked to create these small chunks called cacao nibs.
Cacao Nibs
Cacao nibs are either roasted or unroasted. Unroasted are referred to as ‘raw’.
Cacao Liquor
Cacao liquor is made by crushing the cacao nibs and contains roughly equal amounts of cacao butter and cacao powder. The liquor will be in a solid or semi-solid form and is sometimes described as paste.
Cacao Butter
This is a pure stable plant-fat that is extracted by pressing cacao liquor to separate the fat from the solids (powder). Creating cacao butter.
Cacao Powder
When the plant fat (butter) is separated and removed from the cacao liquor what remains is this cacao powder.
